1. Fresh Ingredients: This is my first point because it is so important. It is always better to buy fresh good quality meat from your local butcher rather than frozen stuff from the supermarket. Fresh meat cooks easier, has better texture and thus tastes much better. This point also applies to the other ingredients you may use like vegetables.
2. Papaya Tenderiser: Over the years, I have discovered that raw papaya paste is better than the tenderisers available on the market. Make a paste of RAW papaya and apply it to your meat before applying the BBQ marinade.
3. Marinate For An Extended Period: If you marinate right before you BBQ then don’t wonder what went wrong. For the flavours to set into the meat, it takes time. Whatever recipe you use to marinate, remember to marinate slowly and quite thoroughly. When done leave it over night or even better would be a complete day.
4. Slow Burn: While it takes longer to cook, cooking on a lower heat setting gives you a great taste premium. The slow burn lets the meat cook evenly all over and inside out. It allows time for the flavours to lock into the meat. It also allows the meat to cook in its own juices and retain them (provided you don’t overcook). Thus cooking slowly prevents the meat from tasting dry.
5. Pre-cook: After reading the last tip you might think that it is not practical to cook slowly at a BBQ, especially if your BBQ is outdoors. The trick is to pre-cook your meat so it won’t take you long to finalise it on the BBQ grill. Pre-cooking makes life so much easier without sacrificing taste; it’s unbelievable, so I definitely recommend you try it.
